This book presents an anthology of recipes from Ushantine, exotic or revisited, based on vieille fish, the queen of the Breton coasts... Other specialists or enthusiasts contribute, whether they are biologists, fishermen, fishmongers, restaurateurs, authors or illustrators... with a common point in all of them, the desire to talk about this astonishing fish and to put to rest a few ill-founded rumors.
